"I have a 69 Mustang Sportroof with stock 14" rims and 215/70 front tires and 245/60 rear tires. Can I go 15x7 rims front with 225/60 tires and 15x8 rims rear with 255/60 tires with no clearance issues?"

Maybe. Your best bet would be to consult with a tire daler, they have all those specs available in house.
